Handling sharks will vary depending upon species. Some sharks you don't want to land or handle at all because they're potentially so dangerous. The Thresher shark doesn't have big teeth, but has a long whip-like tail. That technique is much different from handling a Spiny Dogfish(shark). With the Spiny you have to pay close attention to the biggest burliest spines you've ever seen (at least I've ever seen). Plus they're haired up.
Handling sharks is going to depend on the species. There might be a specific technique for each one. If you're going to take it home for table fare, try to stay away from gaffing the big ones. They just get pissed. Tire them out as much as possible. I've beat on them before, but I think I helped revive them more than anything.

Oh, and keep your hands and feet away from their mouth.
