Jason,
You are right about the saddles. I have a 89 Jeep Cherokee and two scupper pros would fit just fine, but when I put my tandem up there it fits but not right. I have 48" cross bars. It's not the rack, it's the width of your bars and the width of your vehicle. The saddles are awsome and I have them paired up with the hully rollers on the back. When transporting the saddles really have put my mind at ease. I used to run with 4 hully rollers and cross wind were an issue.
Most bike shops carry the rack and can get the parts you need very quickly. I have yet to see them pirced below the retail listed on yakima's website, so that is why I bought everything but the cross bars through eBay.
The racks are rock solid. Last year when I was fixing up the house I transported 4 sheets of 5/8" dry wall and 10 2x4x8s on the racks and did that and similar loads several time through the project. I didn't get the Thules because most of the Thule rack I see, the crossbars are bowed.
I don't have experience with the stackers, but you could probably find a review at paddling.net and email the reviewers.
