I can't imagine this sport growing so large that it would severely impact coastal fisheries. Though I guess it's possible that a huge pack of kayak anglers could concentrate on a small area (like some party boats do) until it dries up. If just one cattle boat hits a spot like La Jolla, that's about 40+ anglers with lines in the water. I also consider that a lot of kayak anglers like yourself, release most if not all of the fish they catch. I haven't been on a cattle boat for a while, and I'm not speaking for all of them, but catch and release is not a term you see or hear much. Seems like those fish are already in potato sacks before they hit the deck (though you won't see me throwing back too many WSBs and Halibuts).

How do they like their waders?

I've never paddled a Fisn n' Dive. What would you suggest would be a comfortable cut off point in paddler size for that kayak. Would you recommend that boat for a smaller, lighter guy as well?
