I didn't used to like to eat sand bass that much
untill a friend told me this great tip. Sometimes sand bass don't taste really fresh like some other good eating fish like white seabass. Filet them and remove the skin. Cut out any red meat. Then I put the filets in a tupperware container and cover them with milk seal it up and let them soak till the next day. Then remove and rinse them. It gets rid of that gamey taste they have somtimes. Then cook them the way you usually do. Deep fry, saute, bake them in the oven, whatever. This same trick works for barracuda or bonita or any kind of strong tasting fish. It really does work.
