The key word is occasionally. I have a tandem, because I have kids, but I ended up buying a single seater, for the days I go without the kids. My wife has been on the kayak once in three seasons. My tandem works great solo, I just wanted a single seater that I could rig more permanently.
Because I use the tandem both as a tandem and a solo kayak, I had to keep my Fish Finder protable. I am always re-adjusting one of my seats. This seems trivial, but the more and more you go out, all the extra rigging becomes a pain. It's kind of nice to just show up to the beach, toss my stuff in the hull, clip on my seat and go.
