The idea is to make sure there are no bubbles between the hull and the transducer. If you have bubbles in the puddle of goop around the edges, then it looks like you did a good job squeezing them all out.
I explained this in my article and I'll give it here again. If you ever watch a pastry chef work with frosting or other foods in a pastry bag, air is a big problem. They put the tip down against the surface and never pick it up until the design or mound they are creating is formed. They let it build up around the tip of the bag never lifting the tip out of the mound.
Do the same thing with your goop. Stick the tip of the tube of goop against the hull and slowly squeeze out a mount of goop without ever lifting the tip of the tube of your goop mound. This will keep bubbles out.
