I'm not really into fixed mounted lights on my kayak. The headlamps are great. Since they're not fixed, you can turn towards that large splash you just heard. With the fixed mounted lights you have to paddle, paddle, paddle to reposition the kayak towards the noise, for example.
The Princeton Matrix is waterproof. Though I wouldn't use it for diving (who knows, it might work fine), kayaking at night it's perfect for.
Looks cool too.
You can always get the remote control mounted lights. They're expensive and require some juice. But if you can't control where they're aiming other than pointing your kayak in the direction you want to view, they're extremely limited.
