Many have been in your situation, I was about seven years ago. I went with the tandem and hated it, let me explain. If someone wants to go "sometimes" that usually means they'll go once or twice and now your stuck with a tandem that's not tricked out the way you want it. In addition to talking to the back of someones head all day, launching and landing tandem in the surf can be an ordeal. On the other hand if your girlfriend digs it she'll want her own yak anyway. My suggestion is to get your kayak, and when she wants to go out rent or bum one off a friend. IMHO kayaking tandem stinks, no matter who your other paddler is. I had my tandem about 3 monthes before I traded it in for 2 singles.
