keeping catch fresh

Hey everyone I am still fairly new to kayak fishing and have yet to land a large fish (anything over 5 lbs.)what I was wondering was how soon after you make a big catch such as a yellowtail or WSB do you clean it? How do most of you keep them after you catch them I.E. on a stringer in the water,in a hatch with some ice. Do any of you bleed them out while on the water and clean them to keep them more fresh?
